Chitlins are not for the faint of palate or smell, which is why traditionally they are cooked "outdoors" at hog killings in Winter months. Try boiling them with a few potatoes and bay leaves. This will help with the smell slightly, but don't expect roses. And Gina, don't be so quick to turn up your nose at your boyfriends "country" family as you say. Authentic sausages, be they Italian, kielbasa, brats in Wisconsin, right? are not encased in Saran wrap you know! Good luck Gina, but just the same, cook them when there's no one home. Chef E.
