Lift up your hands and count your fingers -- that's a good answer for the number of different speed limits and speeds that these rides can be ridden. Slow with lots of stops in many places. Brisk with lots of stops in many places. Slow with few stops. Brisk with few stops. Etc, etc. All of the basic routes are easily doable for a day ride, and if one wants to do them more leisurely, you can do a partial ride. I've been there many times -- sometimes I will do the full loops, and sometimes I do a leisurely on just part of the loop.
Once you are in Montrose there will be some sign-up sheets where the leader will specific the ride and the type (slow, leisurely, moderate, brisk, photo-run, etc). Even better than this is to hook-up with various folks in the evenings at the Red Arrow, get to know them, and talk about the kind of ride you/they would like to do, then go for it in a small group.
