Our seat is .050 thick 5053-0 aluminum and is held in place with four Dzus fasteners - more for convenience than anything else. Don't use 6061 aluminum unless it is in the 0 or annealed condition because it is to difficult to form. Also stay away from the 7075 or 2024 aluminum alloys as neither lend themselves to welding and are difficult to form without special tools. If you have already bought 6061-T6, there is a relatively simple annealing process that can be applied using an oxyfuel torch.
Whatever you use, you will find forming a seat the most difficult part of the body fabrication. Personally, I would have a pro do it.
