Put a few of them on top of the telly (an excellent source of dry heat, unless you have one the the flat screen ones), and let them dry out and warm up. Once this has happened, and the plants look like they stabilized a bit carefully pop out the roots and look at them. If possible repot onto a coarse sandy mix, instead of garden centre potting soil. There is a chance the plants will make a pup, but the rot is usually far more extensive than appearances indicate/ Another thought is moisture through condensation in the greenhouse, dripping inside the meristem cup.

Puyas have always given me trouble. But I doubt it's the cold. I believe the soil has to be absolutely superbly drained . . . virtually pure sand. Otherwise, the roots start to rot, and that somehow leads to meristem rot as well.
