I'll try to answer your questions to the best of my ability.
Each element has its own way to draw a pentagram. Where you begin to draw your star determines which element is represented.
East: Invoking- 5, 2, 3, 4, 1, 5
Banishing- 5, 1, 4, 3, 2, 5
South: Invoking- 1, 5, 2, 3, 4, 1
Banishing- 1, 4, 3, 2, 5, 1
West: Invoking- 2, 3, 4, 5, 1, 2
Banishing- 2, 1, 5, 4, 3, 2
North: Invoking- 3, 4, 5, 1, 2, 3
Banishing- 3, 2, 1, 5, 4, 3
Spirit: Invoking- 1, 4, 3, 2, 5, 1
Banishing- 1, 5, 2, 3, 4, 1
There may be slight variations between different Traditions, but this is the way that I was trained.
Elements are what is associated with each direction. These can also vary from Trad to Trad but are generally:
North-Earth
East-Air
South-Fire
West-Water
Center-Spirit
Elementals are creatures/aspects that are associated with each of the elements. These can also vary but the most common ones called are:
Earth- Gnomes
Air- Sylphs
Water- Undines
Fire- Salamanders
