I've never been to a large gathering, just the open rituals that my old coven would have. I'm in the same situation as you living in the "bible belt" so I haven't had the opportunity to do so. 
I do know one thing for sure, as far as open rituals, its hard to find one that doesn't have some unwanted energies, that was one of the problems that my old coven had, we had some crazy ones show up at times where the HPs had to stop the ritual & deal with them, once she had to open the circle and kick one out! 
The HP'S got to where our open rituals where by invitation only after she got to know you. The problem that I have found in Dallas is the when there is an open ritual, its open all the way and I'd rather meet with a couple of close friends who know a little about the sabbath or by myself, then dealing with the "ones that know everything" and show up induced or full of themselves. 
I'm about 60miles SE of Dallas TX, if you don't mind me asking,where are you at?
