Seeing as I'm agnostic, i'm probably not the best person to answer this question. But no one has stepped forward, and I do know a little. So I'll just say what I know and anyone is welcome to correct me if I'm wrong
Wicca itself is actually a very young religion...around fifty years old. It was founded by a man named Gerald Gardner, so he may have come up with the "Wicca-exclusive" God and Goddess...the Green Man and such. They are probably based off some older tradition, but I'm afraid I don't know what.
But many witches see the God and Goddess as the two halves of the All, and that all Deity's are actually just facets of the All. Meaning that Athena, Thor, Anubis, and even the Christian God are all real...are, in fact, all parts of one whole. And all of these Deities are ancient and have myths and legends all their own.
I can't speak for all witches, but many choose which God and Goddess (which parts of the whole) they wish to worship. If I were to practise witchcraft religiously, I would probably choose Athena and Buddha, because I can get behind their philosophies and to me they seem like figures worthy of worship. Or, you may exclusively worship one pantheon, such as greek or Tao. There are even some (called Christ-0 Pagans) who have Jesus as their God and Mary as their Goddess. It's essentially whatever feels best to you.
My advice to you is to not worry so much about this aspect of wicca...if a certain deity is of interest to you, research him/her and decide if you want to include them in your work. If not, no big deal. Unlike other religions, there is no "worship or else" clause in Wicca
