Admittedly, I'm not quite as refined in my observations as you and some others; but I do notice some variety among the Opuntias. I mainly like to hike the bloom in spring to take my closest looks at these cacti. We have a park here locally that is great for the prickly pears, and I go to the Beezley Hills once-a-year to see the hedgehogs in flower. There is a form of the Opuntia that you are probably familiar with that takes on a very warped and twisted appearance, but I have never seen this personally.
Speaking of Opuntias, I just got back from Florida, where I was a bit surprised to see prickly pears growing growing amongst the grasses and palmettos right on Daytona Beach above the surfzone. They'll grow just about anywhere!
