Scott- Excellent pictures! I really like how you show (or mention) the protection and then show what the plants look like now. You seem to be one of the few who is having luck with "hardy" Gardenias, I've heard nothing but bad things. The results from both your place and Tim's is making me want to try Aucuba again, but this time out of any sun! Who knows maybe it is way hardier than is commonly thought, but we've all been growing it wrong!
Your observations about the bamboo (P. aureosulcata var. aureocaulis??) are right on the temperature for cold damage appearing, at least in my experience. Somewhere between -18C and -20C (-1 and -8F) the leaves will be killed, with sustained cold or lower temperatures killing the culms.
