It is probably 8 or 10 feet tall. My largest have been in the 14 foot range but they had been growing in a duck pen. They succumbed to the weevil before I knew such things existed back in the early 90s.
I have trouble believing that soil is related but defer to the experts. The pigment is probably betacyanin which protects plant tissue in adverse conditions in some species.
