I slice them bout 1/4", put several layers of paper towels under and over them, then top with plate and books to weigh them down. I leave them on the counter overnight then flour/egg/breadcrumbs and fry in oil in pan. Then place in casserole dish with sauce and cheese and put in oven till cheese melts. My sweet dear old Italian Aunt taught us kids how to cook Italian since my Mom was Irish
