We use olive oil not vegetable oil. It does come out somewhat greasy but not soggy or limpy I wouldn't bother eating a baked eggplant parm. dish if it wasn't unhealthy,somewhat greasy, cheese smothered, loaded with calories,or drinking de-caf coffee. not crazy about the taste, it's all the bad stuff about them that make them taste better . And as Elle said do drain the eggplant after frying on paper towels before baking with the cheese. I forgot to mention that.
