The date and time are embedded in the photograph itself and checking the photos properties will show you. It helps sort the photos on the computer but if that's not important to you, pull the batteries, keep them with the camera. They should not drain.
The manual can be confusing because so much info is given more than once. First, just the simple way and getting more complex the next time. I read it on the computer so I can see the illustrations better. Having the camera in front of you and checking for the controls as you read is the way to go.
